LAURA'S FRIED RICE | |
1 c. long grain rice 2 tbsp. chopped green onion (white & green parts) 1 tbsp. soy sauce 1/2 tsp. sugar 2 c. water 1 c. cooked ham, cubed 3 tbsp. vegetable oil 2 eggs 3/4 tsp. salt Put rice in medium size saucepan. Rinse several times with water. Drain well. Add water, cover; bring to a boil over high heat. Reduce heat to low, cover and simmer 20 minutes or until all liquid is absorbed. Remove from heat. Let stand, covered a few minutes longer. Heat vegetable oil in a wok or large frying pan, over medium heat. Beat eggs and when oil is very hot pour eggs into pan. Scramble lightly, breaking eggs into small pieces. Add ham and onions. Stir well. Add cooked rice. Stir well. Add the other ingredients. Stir and cook for about a minute longer. |
