OOOH-LA-LA-POTATOES 
6 potatoes
1 c. Cheddar cheese, shredded
6 tbsp. butter
3/4 c. sour cream
3 green onions, chopped (or parsley)
1 tsp. salt
1/4 tsp. pepper

Preheat oven to 300 degrees. Cook potatoes with skins. (Boil, sliced in half.) Cool, peel and mash with potato masher. Combine 4 tablespoons butter and cheese in large saucepan until melted. Remove, blend in sour cream, onion, salt and pepper. Fold into potatoes. Spoon into greased casserole dish. Dot with 2 tablespoons butter. Bake for 25 minutes.
