YAM CAKE | |
2 c. sugar 1 c. butter 16 oz. can yams, drained 3 c. self-rising flour 2 tsp. cinnamon 1/2 tsp. nutmeg 1 c. raisins 8 1/2 oz. well-drained crushed pineapple 1 1/2 tsp. vanilla 5 eggs 1/2 tsp. baking soda 1 c. nuts Heat oven to 375 degrees. Grease and flour tube pan. Blend sugar, butter, vanilla. Add eggs, one at a time. Add cut up yams. Spoon flour in measuring cup; level off. Add flour, cinnamon, soda, nutmeg. Fold in pecans, raisins, pineapple. Put in pan. Bake at 325 degrees for 60-70 minutes. Cool. Frost with coconut-pecan frosting. |
