LEMON RICE PUDDING 
1 c. rice
2 tbsp. cornstarch
1 c. sugar
1 tsp. salt
2 tsp. butter
3 tbsp. lemon juice
2 grated lemon rinds
4 egg yolks
4 c. milk
4 egg whites
1 c. sugar to be added to egg whites

Cook rice according to directions on package. Beat egg yolks well. Add cornstarch and beat. Add sugar, salt, butter, lemon juice, and rind. Mix. Add milk. Bake in casserole for 1 1/2 hours. Stir. Use 350 degree oven. Make a meringue using the egg whites and the other cup of sugar. Spread over baked rice. Brown under broiler and watch every minute. Burns easily.
