OVEN-FRIED CHICKEN 
2 1/2 - 3 lb. broiler-fryer, cut in serving pieces
1/2 c. unsifted all-purpose flour
1 tsp. salt
1/8 tsp. pepper
1/2 tsp. poultry seasoning
1/2 c. melted butter

Preheat oven to 400 degrees F. Wipe chicken well with damp paper towels. In a clean paper bag, combine salt, flour, pepper and poultry seasoning. Shake chicken in bag, a few pieces at a time, coating well. Arrange chicken in very shallow pan (such as a 15x10x1 inch pan). Brush butter over chicken. Cover pan with foil; bake 30 minutes. Remove foil; increase oven temperature to 450 degrees F. and bake 15-20 minutes or until fork tender or golden brown.
