POTATO CANDY 
3/4 c. cold mashed potatoes
4 c. coconut
4 c. powdered sugar
1/2 tsp. salt
1 1/2 tsp. vanilla

Mix powdered sugar and potatoes. Stir in coconut, vanilla and salt. Press into a large pan 1/2 inch thickness. Cut in squares. Let set in refrigerator until firm (or make into a small round ball). Melt 1 (12 ounce) package chocolate morsels and 1/4 pound paraffin in top of double boiler. Dip candy in chocolate and put on waxed paper to cool. This candy is like Peter Paul Mounds.
