DATE AND BRAN MUFFINS 
1 c. all purpose flour
1/2 c. sugar
1/4 tsp. salt
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1 1/4 c. 100% bran
1 c. milk
1 c. chopped dates
1/2 tsp. vanilla
1 egg
1/4 c. oil

Mix flour, sugar, salt, baking powder, and baking soda. Add milk to bran. Let stand 5 minutes. Add dates and vanilla to bran mixture. Beat egg and oil, stirring well. Add egg/oil mixture to bran mixture, stirring well. Add dry ingredients stirring ONLY well enough to mix. Bake in muffin pan for 20 minutes at 400 degrees. Makes 14 muffins.
