RASPBERRY MERINGUE 
1 1/2 c. vanilla wafer crumbs
1/4 c. melted butter
2 tbsp. sugar
4 egg whites
3/4 c. sugar
1 pt. red raspberries, slightly sweetened
1 c. heavy cream, whipped

Combine first 3 ingredients. Press firmly in bottom of a 9" square pan, 2" deep. Beat egg whites until stiff. Add sugar gradually. Swirl over crumb and bake in a 325 degree oven for 15 minutes. Cool.

Spread berries over meringue and top with whipped cream. Cut in squares. Serves 9.
