SILK CHOCOLATE MOUSSE PIE | |
1 pkg. chocolate wafers, crush in food processor blender 1 c. walnuts, chopped very fine (pastry consistency) 1 stick unsalted butter, melted Mix the above together and press into a 9 inch pie pan or 9 inch spring form pan. Chill in refrigerator for about 1 hour or quick freeze for 20 minutes to set. FILLING: 1 c. butter, softened (not melted) 3 oz. unsweetened chocolate, melted & cooled 1 1/2 c. sugar 2 tsp. vanilla 4 whole eggs Sweetened whipped cream Beat butter until smooth and gradually beat in sugar until mixture is light and fluffy. Mix in chocolate and vanilla until mixture has uniform color. Beat in eggs one at a time, beating 3 to 5 minutes after each egg, scraping sides of bowl often. Beating time is very important! Pour mixture into the prepared pie shell and chill in refrigerator at least 6 hours, preferably longer. Garnish with sweetened whipped cream. |
