CREOLE OKRA 
1 lb. okra
2-3 tbsp. cooking oil
1 onion, chopped
1 (16 oz.) can tomatoes, drained & mashed
Salt & pepper

Wash and dry okra. Cut off ends and slice into little thin rounds. Heat oil in a skillet and saute okra and onions. Cook over medium heat, stirring constantly. The okra will produce a slime in the pan as it cooks. As you continue cooking and stirring, the slime will eventually disappear. Add tomatoes, salt and pepper and simmer over low heat until hot.

I picked a bunch of okra this morning and decided to try this recipe. Not bad, not bad! I stir-fried the okra and onion until I thought the slime had diminished....that took a bit of time, but it worked fairly well. Still a little slippery. I used unsalted diced tomatoes (all I had) and seasoned with some Hot Shot pepper mix and some Chili Mix. Very tasty.
