CANDIED SWEET POTATOES 
4 med. (1 1/2 lb.) sweet potatoes
2 tbsp. salad oil or shortening
1/2 c. brown sugar
1/4 c. orange juice
1/4 tsp. grated orange peel (optional)

Wash potatoes, cover with water and boil. Cook until just tender enough to pierce with fork. Drain well.

Combine remaining ingredients, heat to boiling. Cook 2 minutes. Peel and quarter potatoes. Place in shallow greased square pan or pie plate. Pour syrup over all. Bake at 300 degrees for 55 minutes or until glazed.

After first 15 minutes, turn and baste every 10 minutes or so. Can be done ahead of time and heated covered. Serves 8.
