CANDIED SWEET POTATOES 
8 to 10 lg. sweet potatoes
1 c. firmly packed brown sugar
1 tsp. salt
1 c. orange juice
2 tbsp. grated orange rind
1/4 lb. (or less) butter

Cook potatoes in boiling salted water until tender. Cool; peel and slice lengthwise into a greased 9x13 inch baking pan. Arrange potatoes in two layers. Pour orange juice and rind over top. Sprinkle with sugar mixture; dot with butter. Cover. May be refrigerated at this point. Cover with foil and bake at 350 degrees for 30 minutes. Uncover and continue to bake until brown and glazed. Serves 14.

Our family enjoys this dish with turkey or ham dinners.
