CHALLAH BREAD 
3 pkg. active dry yeast
1 1/3 c. warm water
1 tbsp. granulated sugar
1 tbsp. salt
3 tbsp. butter
3 eggs
5-5 1/2 c. flour
1 egg yolk, mixed with 1 tsp. water

Proof the yeast in a large bowl. Add sugar, salt, butter and eggs, then 5 cups flour, 1 cup at a time, beating thoroughly. Add enough additional flour to make a stiff dough. Knead 10 minutes or until smooth and elastic. Cover and let rise in a greased bowl until doubled.

Punch dough down and divide into 6 equal parts. Roll each portion into a rope about 1 inch in diameter and braid 3 ropes together to make each loaf. Let rise on a baking sheet until almost double. Brush with egg yolk and water. Bake at 400 degrees 35-45 minutes. Makes 2 loaves.
