OVEN - "FRIED" CHICKEN LEGS 
6 chicken legs & thighs, skinned & trimmed of fat
Milk (skim or low-fat) for soaking the chicken
1/2 c. plain dry bread crumbs or cereal crumbs
1/3 c. grated Parmesan cheese
1 tbsp. dried parsley flakes, crumbled
1/4 tsp. freshly ground black pepper
Vegetable oil spray for chicken, if desired
