CHEESE CAKE 
2 (8 oz.) pkgs. cream cheese
1 (16 oz.) sour cream
3 eggs, room temperature
1 c. sugar
2 tbsp. vanilla
1 ready made graham crust, broken up (1/3 c. crumbled graham for topping)
9" or 10" spring pan

Mix cream cheese and sugar; beat until creamy. Add eggs, one at a time, beating at least 2 minutes after each one. Add sour cream and vanilla. Beat about 5 minutes. Grease your pan with butter, coat sides and bottom with crumbled cracker crumbs. Pour mixture into pan. Sprinkle 1/3 cup of graham crumbs on top of cake. Bake in a preheated oven at 350 degrees for 45 minutes. Turn off oven and let cool 1 hour in oven. DO NOT OPEN OVEN WHILE BAKING OR DISASTROUS RESULTS IF YOU DO!
