PORK STEAK WITH RICE AND
TOMATOES
 
4 chops or steaks
1 tsp. salt
Dash of pepper
1/2 tsp. paprika, if desired
1 onion, sliced
1/2 green pepper
1 1/2 c. canned tomatoes
1/3 c. raw rice
1 1/2 c. water

Sprinkle meat with seasonings. Brown in hot skillet. Place in roasting pan with sliced onion and pepper on each chop. Add tomatoes. Brown rice in skillet, add water and pour around chops. Cover and bake at 350 degrees for 2 hours.

Emily uses foil or a cookie sheet for the cover and bakes 1 1/2 hours at 325 degrees and usually mixes the tomatoes with the rice and water. 1/3 cup raw rice = 1 cup cooked.
