BROCCOLI CHEESE CASSEROLE 
2 pkgs. frozen chopped broccoli (or fresh)
1 can cream of chicken soup
1/2 c. milk
1 sm. onion, chopped
1/4 c. butter
1 c. grated Cheddar cheese
2 c. rice
Salt and pepper to taste

Cook broccoli slightly. Drain well. Cook rice. Saute onion in butter. Add soup and milk to onion. Stir until smooth. Add rice, broccoli and 1/2 of the cheese. Add chopped chicken if desired. Cook covered at 300 degrees for 30 to 45 minutes. Top with remaining cheese, cook slightly longer.
