CREAMY CHEESECAKE 
3 c. cottage cheese, drained
5 eggs, slightly beaten
1/4 tsp. salt
1 tsp. vanilla
1/4 tsp. almond flavoring
1 c. sugar
3/4 c. flour
1 1/2 c. milk

JAM SAUCE:

1/2 c. strawberry jam
1/2 tsp. lemon juice
1/4 tsp. vanilla

Blend cottage cheese with 1 cup milk in blender until smooth. Add eggs, salt, vanilla and almond flavoring; mix thoroughly. Combine sugar, flour and slowly blend into cheese mixture; add milk. Pour into 9" square pan. Set dish in shallow pan of water, about 1" deep and place on middle shelf of oven. Bake at 350 degrees for 1 hour or until knife in center comes out clean. Surface may be pale. Cool, cut into squares and top with sauce.
