CHEESY VEGETABLE CASSEROLE 
20 oz. frozen mixed vegetables, cooked according to pkg. directions
1 c. chopped celery (optional)
1/3 c. chopped onion (or flakes)
1 c. mayonnaise
1/2 c. shredded sharp Cheddar cheese
1/4 tsp. salt
1/8 tsp. pepper

Combine the above ingredients. Spoon into greased 2 quart casserole. Sprinkle with topping.

TOPPING:

2 c. crushed Cheddar cheese crackers
1/4 c. melted butter

Bake at 300 degrees for 30-40 minutes.
