CHEF NO-TELL'S CONTINENTAL ROAST PORK | |
2 1/2 - 3 lb. boneless pork roast 1/2 tsp. garlic powder 3 tsp. angostura bitters 1/2 c. water 3-4 med. cooking apples 1/2 c. packed light brown sugar 1/2 c. butter 1 tsp. salt Sprinkle roast with garlic powder and salt. Place roast on rack in roasting pan. Mix butters and 1/4 cup of water together and thoroughly baste roast with mixture. Roast in 325 degree oven for about 2 hours or until internal temperature reaches 170 degrees, basting meat with bitters mixture every fifteen minutes (the more basting, the better). Allow roast to rest about fifteen minutes when done. Core and slice apples about 1/4 inch thick. About Fifteen minutes before roast is done, melt butter in large saucepan and add the apple rings, a few at a time and lightly brown on each side. Add brown sugar and remaining water and simmer for 20 minutes. Slice roast into equal 1/2 inch thick slices, place on warmed serving tray, top each with apple ring and sauce and serve immediately. Goes great with small whole boiled potatoes that have been rubbed with butter, lightly sprinkled with garlic powder and oven browned and honeyed baby carrots. For added excitement, sprinkle roast very lightly with fresh ground mint just before serving. |
