GREEN CHILI FRITTATA | |
1/2 c. flour 1 tsp. baking powder 10 eggs, beaten 1/4 lb. butter, melted and cooled 2 c. sm. curd cottage cheese 1 lb. Monterey Jack cheese, grated 3 (4 oz.) cans diced green chilies Salt to taste Preheat oven to 350 degrees. Butter 9 x 13 inch shallow baking dish. Mix flour and baking powder. Add eggs and butter, blending well. Blend in remaining ingredients. Put in baking dish. Bake 35 to 45 minutes or until set. Cut into squares and serve very hot. Serves 8 or 12 if served as hors d'oeuvre. |
