TWO-SQUASH STIR-FRY 
2 tbsp. vegetable oil
2 tbsp. butter
6 green onions, sliced
4 carrots, scraped, quartered, and sliced
2 med. zucchini, sliced
2 lg. yellow squash, halved and slice
1 med. green pepper, chopped
1/2 tsp. salt
1/4 tsp. pepper

Pour oil around top of a preheated wok or large skillet; add butter and allow to heat at medium high (325 degrees) for 2 minutes. Add vegetables and seasonings; stir fry 5 minutes. Cover and simmer an additional 5 minutes or until vegetables are crisp and tender. Serve immediately. 8 servings.

NOTE: You can also add cabbage or other vegetables of your choice.
