HURRICANE OATMEAL CAKE 
1 c. old fashioned Quaker oats
1 1/4 c. boiling water
2 eggs
1 c. granulated sugar
1 c. brown sugar
1/2 c. vegetable oil
1 1/2 c. flour
1 tsp. baking soda
1 tsp. salt; optional
1 tsp. cinnamon, generous

Combine oats and boiling water; set aside. Beat eggs, sugars, and oil together. Add all ingredients together and mix. Pour into greased and floured 13 x 9 pan. Bake at 350 degrees for 30-35 minutes.

TOPPING:

1 c. coconut
1 c. brown sugar
6 tbsp. melted butter
1/2 c. chopped pecans; optional
1/4 c. evaporated milk

Spread over cake. Broil until topping is light brown, about 2 minutes. 16-20 servings.
