CHEDDAR CHOWDER 
2 c. boiling water
2 c. cauliflower, cut up
1 c. diced potatoes
1/2 c. sliced carrots
1/2 c. sliced celery
1/4 c. chopped onion
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 c. butter
1/4 c. flour
2 c. milk
2 c. (8 oz.0 shredded cheddar cheese
1 c. cubed cooked ham

In saucepan combine water, vegetables, salt and pepper. Cover and simmer ten minutes. Do not drain. In large saucepan, melt butter. Stir in flour, then milk, and heat to boiling. Continue simmering, stirring constantly until thick. Add cheddar cheese, stir until melted. Add undrained vegetables and the ham. Heat through but do not boil. Makes 8 servings.
