SCALLOPS IN BACON 
1 lb. scallops, rinsed or soaked in milk
1 lb. bacon
Soy sauce

SWEET AND SOUR SAUCE:

5 tbsp. sugar
1/3 c. cider vinegar
1.4 c. red currant jelly
2 tbsp. catsup
1 tbsp. soy sauce
1 tbsp. cornstarch
1/4 c. cold water

To prepare scallops: Cut large scallops in half. Wrap each scallop in 1/2 strip of bacon. Secure with toothpick. Sprinkle soy sauce over all. Place in baking dish and bake at 425 degrees, turning once, for 20-30 minutes. Dip in Sweet and Sour Sauce.

To prepare Sweet and Sour Sauce: In a medium saucepan, heat sugar, vinegar, currant jelly, catsup and soy sauce until jelly is melted. Dissolve cornstarch in cold water. Slowly stir cornstarch into sauce and cook for 5 minutes. Preparation Time: 25 minutes.

Serves 4-6.
