Prepare frozen cheese or meat tortellini according to instructions or bring to boil, add salt and olive oil, place tortellini in boiling water, let come to boil again until tender; drain.
Heat in saucepan over medium heat 1/2 cup butter (or low fat butter), 1/2 cup heavy, light cream or half and half (skim for dieters) and 1 cup grated Parmesan cheese (not in a can). Salt and white or black pepper. Parsley flakes or basil optional at this point (do not boil). When sauce is creamy add tortellini, serve when hot.
