SHRIMP CHOWDER 
1 lb. cooked shrimp, cut in pieces
1 lb. pkg. Velveeta cheese
4 med. onions, chopped finely
4 med. potatoes, cut in sm. pieces
1 qt. milk
1/2 stick butter
1 scant c. water

Saute onions in butter slightly. Add potatoes and water; cook until tender. Melt cheese in milk; add to mixture, then add shrimp.

I use more shrimp; and I like to use a few green onions, tops and bottoms, instead of one of the onions. I also add some parsley. Salt and pepper to taste.

Note: Do not allow cheese and milk mixture to boil after adding shrimp; it will curdle if you do.
