MOCK TURTLE SOUP | |
1 lb. ground beef (good quality) 1 med. onion, chopped 1 tbsp. mixed spices in a tea ball 1/2 lemon, cut in slices 2 tbsp. Lea & Perrins Worcestershire sauce 1 (6 oz.) can tomato paste 2 tsp. Kitchen Bouquet 3 hard-boiled eggs Brown the ground beef, chop it up fine with a fork or even in the blender. Drain all grease. Put beef in a Dutch oven with 2 quarts of water. Add all the other ingredients except the eggs. Simmer for approximately 1 to 1 1/2 hours. In the last hour, add the lemon slices, salt and pepper to taste. Just before serving, add sliced hard-boiled eggs to soup. |
