BROCCOLI CASSEROLE 
2 (10 oz.) pkg. frozen chopped broccoli
1 c. mayonnaise
2 eggs, well beaten
1 tbsp. grated onion
1 can cream of mushroom soup
1 c. chopped Velveeta cheese
1 c. crushed crackers (saltines, Ritz, etc.) for top

Cook broccoli. Drain well. Mix with first 5 ingredients. Put in greased casserole dish and top with cracker crumbs. Bake in 400 degree oven for 20-30 minutes until top is brown and bubbling. You may substitute chopped spinach for broccoli.
