SUNSHINE CARROTS 
About 5 medium sized carrots, sliced and cooked until tender. Drain.

SAUCE:

1 tbsp. sugar
1 tsp. cornstarch
1/4 tsp. salt
1/2 tsp. ginger
1/4 c. orange juice
2 tbsp. butter

Combine sugar, cornstarch, salt, ginger and orange juice. Cook until thickened. Boil 1 minute. Stir in butter. Pour over hot carrots. Sauce cooks nicely in a microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
