NO MISTAKE SALSA | |
Boil 4-5 large tomatoes 10-15 minutes and peel. Or 1 large can of whole tomatoes (mostly drain) or you can boil Mexican, green tomatoes, don't need to peel. Either add to the regular tomatoes, or make a green salsa using about 7 medium to large. Use all of these in dry spice form (to taste): 1/2 cup cilantro 1/4 cup parsley 2 tbs cumin 1/2 cup onion powder 1/4 cup garlic powder (or fresh minced) 1 tbsp jalepeno powder 2 tsp RED pepper (crushed or powder) 1/4 cup vinegar (also adjustable) Any of these can be adusted. You can also choose to use fresh ingredients, ie: cilantro, onion, garlic, jalepeno (boil), etc. The version given is probably a milder flavor. You really can't mess this up. Just be sure if you cook your own tomatoes, cook long enough, otherwise your sauce may be too thin. You can drain the tomatoes, then peel. Use the excess juice from the peeled tomatoes, because they will be "juicy". That juice is high in Vitamin C and other nutrients. Even better if you have home grown. Once you've bought your dry ingredients, you can throw this all together in just minutes if using the canned tomatoes. Do drain the canned ones just a little. Put all into a blender, taste, adjust, taste, adjust more, etc....ENJOY!! PS....know the taste and smell of each of your ingredients so you'll know how best to adjust.
