MEATBALLS WRAPPED IN BACON 
1 lb. lean hamburger
1/4 c. minced onion
1 egg, slightly beaten
1 tsp. salt
1/2 c. tomato juice or sauce
1 c. cooked rice
6 strips bacon
1 (1 lb.) can whole cranberry sauce
1/3 c. brown sugar
1 tbsp. lemon juice

Mix hamburger, rice, onion, egg, salt, tomato juice together. Form into 6 large meatballs (1/2 cup mixture each). Put a piece of bacon around the outside of each meatball. Secure with a toothpick. Mix the cranberry sauce, brown sugar and lemon juice together to pour over meatballs. Bake at 375 degrees for 1 hour. You may need to drain off excess juice as these bake. (A doubled recipe serves 6 adults nicely; but you don't have to double the cranberry mixture even if you increase the meatballs and bacon.)
