PASTA WITH POTATOES | |
1/2 can whole peeled tomatoes, chopped 1/2 bag potatoes cut into small pieces 1 onion 3 pieces of garlic 1/4 c. olive oil 5 fresh basil leaves Salt and pepper to taste 1/3 c. grated cheese 1/2 lb. any small pasta In a pot saute onion and garlic in olive oil. Add 1/2 can peeled tomatoes. Stir and let cook for 10 minutes. Then add potatoes; stir and add water until potatoes are covered. Season with salt, pepper, and basil. Let cook about 20 minutes until potatoes are tender. Add cheese. In separate pot cook 1/2 pound pasta. Drain pasta, then mix together with potatoes. Variation: Use rice instead of pasta. |
