CHEESE TOPPED CAULIFLOWER 
2 tbsp. butter
1/4 tsp. salt
1 med. chopped onion
1/2 tsp. Worcestershire sauce
2 c. (8 oz.) shredded cheese
1 whole cauliflower, cooked and drained
2 tbsp. flour
1/2 tsp. dry mustard
1 c. milk

Melt butter over low heat, stir in flour, salt, dry mustard and onion. Cook, stirring constantly until smooth and bubbly (about 2 minutes). Remove from heat gradually stir in milk and Worcestershire sauce.

Bring to a boil over medium heat stirring constantly. Boil and stir 1 minute. Add cheese, stir until melted place cauliflower on heated platter and pour sauce over. Dust with paprika (optional).
