ENCHILADA CASSEROLE 
3 lb. ground chuck
1 can mild enchilada sauce
2 sm. cans taco sauce, mild
2 cans cream of mushroom soup
1 c. mozzarella cheese
1 c. grated cheese, any kind
1 pkg. Dorito chips

Brown ground chuck and season with salt, pepper and chili powder, if desired. Add sauces and soup to meat mixture. Cover bottom of casserole dish with chips. Then spread meat mixture on chips. Then layer cheese. Repeat. Bake at 350 degrees until cheese melts.
