ENCHILADA CASSEROLE 
1 (8 oz.) pkg. Velveeta or 1 (6 oz.) mild Mexican
1 can mild enchilada sauce
1 can evaporated milk
Onion
2 lbs. ground beef
1 big bag nacho cheese Dorito chips
2 pkgs. Mozzarella cheese
Jalapeno peppers

Melt cheese, sauce, milk and jalapeno peppers. Cook beef and onion. In a 13x9 inch pan, layer chips, sauce mixture, and meat. Top with Mozzarella cheese. Bake at 350 degrees until cheese is golden.
