CREAM OF BROCCOLI SOUP 
5 c. chicken broth
2 heads broccoli, med.
5 tbsp. butter
4 tbsp. flour
3 c. light cream
Salt & Pepper to taste

Prepare broccoli. Wash and cut off the bottom of the bunch. Chop coarsely. Place in a saucepan with broth. Cook over medium heat until broccoli is tender. Mash the broccoli into the saucepan with potato masher or metal utensil. Melt butter in your soup pot or kettle, blend in the flour, and stir in cream. Simmer over a low flame, stirring constantly for 3 minutes or until thickened. Pour the broccoli mixture into cream. Simmer another 3 minutes. Add salt and pepper to taste. Serves 8. Don't let the cream boil.
