LAURA JUSTUS' STUFFED SHELLS 
1/2 box lg. shells
1 1/2 c. fat free cottage cheese
2 tbsp. fresh parsley or spinach, chopped
1 lg. egg, or equal amount of egg substitute
Pinch of nutmeg
1/2 c. grated Parmesan cheese

Cook shells according to directions on box. Combine the rest of the ingredients and stuff the shells with the mixture. Arrange in a large baking dish (9 x 13 inch). Pour you favorite spaghetti sauce over the stuffed shells and bake 30-45 minutes or until cooked through.
