STUFFED SHELLS CAPRI 
20 jumbo shells
1 (10 oz.) pkg. chopped frozen spinach or broccoli
2 eggs
1 1/2 lbs. ricotta cheese
1/4 lb. Mozzarella cheese
1/2 tsp. salt
1/4 c. bread crumbs
1 lg. clove garlic, crushed
2 (1 pt.) jars marinara sauce

Boil shells in 3 quarts water with 1 tablespoon salt and a few drops of oil. Cook 20 minutes and drain and cool. Cook spinach (or broccoli) briefly; squeeze out moisture. Beat eggs in large bowl. Add cheeses, salt, bread crumbs, garlic and spinach (or broccoli); mix well. Fill shells with a teaspoon and place in 9"x12" pan in which 1 jar marinara sauce has been poured. When all shells are filled, pour second jar of sauce over the top. Cover and bake 350 degrees for 35 minutes. Freezes well. Serves 6.
