BALI PARFAIT 
1 banana
3/4 c. drained unsweetened crushed pineapple
3 tbsp. unsweetened flaked coconut
2 tbsp. brown sugar
1/4 tsp. cinnamon
Pinch of mace
1 qt. vanilla ice cream

Mash the banana and combine it with the crushed pineapple, coconut, brown sugar, cinnamon and mace. Soften the ice cream and quickly stir the banana mixture into it. Pack the ice cream in plastic containers, cover and freeze until firm. Makes 1 generous quart.
