SNOWCAPPED BROCCOLI 
2 (10 oz.) pkgs. frozen broccoli spears
2 egg whites
1/4 tsp. salt
1/3 c. mayonnaise or salad dressing
1 tbsp. butter, melted
Grated Parmesan cheese

Cook frozen broccoli spears according to package directions; drain well. Beat egg whites and salt with a rotary beater until stiff peaks form. Gently fold in mayonnaise or salad dressing; set aside.

Arrange cooked broccoli with stem ends toward center on an oven-proof platter or in a 9-inch pie plate; drizzle with melted butter.

Spoon the mayonnaise mixture onto the center of the platter over broccoli stems; sprinkle with grated Parmesan cheese. Bake in a 350 degree oven for 12 to 15 minutes or until topping is golden. Makes 6 servings.
