KATE'S BLUEBERRY MUFFINS | |
1 1/4 c. fresh or frozen blueberries 1/2 c. sugar 2 c. flour 1/2 c. sugar 3/4 tsp. baking soda 1/4 tsp. salt 1 egg, slightly beaten 3/4 c. buttermilk 1/4 c. vegetable oil 1/4 c. sugar to sprinkle on top Heat oven to 375 degrees. Line 12 muffin cups with paper baking cups. Combine blueberries and 1/2 cup sugar; set aside. Combine dry ingredients; stir in egg, buttermilk, oil just until dry ingredients are moistened. Gently fold in blueberries. Spoon into muffin cups. Sprinkle a bit of sugar on each muffin. Bake about 25 minutes. |
