GOLDEN DELICIOUS APPLE PIE 
2 sticks butter, soft
8 oz. cream cheese
2 1/2 c. flour
1/4 c. cream
1 egg, separated
2 tbsp. butter

Blend butter and cream cheese together. Add flour and cream. Chill at least 1 hour. Cut into two pieces. Roll 1/2 dough and fit into pie pan. Do not press dough against the rim. Coat both bottom and sides with egg whites - not the rim. Fill heaping in the center, and dot apples with 2 tablespoons butter. Brush rim with cold water.

Roll out top crust. Fold and cut as desired for vents. Ease crust on top of filling loosely and fold edges under. Egg wash with egg yolk and a little water (add 1 tablespoon water to egg yolk) coating surface. Bake at 400 degrees for 15 minutes, reduce heat to 350 degrees and continue baking 45 minutes more.

APPLE FILLING:

2 1/2 to 3 lbs. Golden Delicious apples
1 1/2 tbsp. cornstarch
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. sugar
2 tbsp. raisins (optional)

Peel and slice apples. Toss lightly with remaining ingredients and pour into prepared crust. Follow as above instructions state.
