SQUASH CASSEROLE 
Sm. yellow squash or zucchini
1 lg. onion
2 eggs
2 tbsp. butter
Salt and pepper
1/2 tbsp. Louisiana Hot Sauce
1 c. Pepperidge Farm stuffing
1/2 c. celery, chopped
1 c. milk
1 c. grated Cheddar cheese
1/2 c. Velveeta cheese

Boil squash, onion, celery in small amount of water, season - drain well. Place in well greased casserole. Mix beaten eggs, milk, bread, butter and one-half of the cheese. Pour over squash mixture, then top with remaining cheese. Bake for 30 minutes at 350 degrees.
