AUNT PATSY'S IRISH SODA BREAD 
2 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 tbsp. sugar
1 tsp. caraway seeds (opt.)
3/4 c. golden raisins, soaked in hot water
1 c. sour milk (or 1 cup fresh milk combined with 1 tbsp. vinegar)
1 egg, beaten
1/3 c. chilled butter

1. Preheat oven to 400 degrees. Combine flour, baking powder, baking soda, salt, sugar and caraway seeds, if using.

2. Drain the raisins and combine with sour milk and egg.

3. Mix chilled butter into the flour mixture with your hands until mixture is grainy. Add raisin mixture and combine quickly.

4. Grease an 8" casserole. Turn batter into casserole. With the edge of a floured knife, cut a shallow cross in the top. Bake 30 minutes.
