ONE POT CHICKEN AND RICE DINNER 
4-6 boneless, skinless chicken breast, cut into cubes
2 chicken bouillon cubes
4-6 raw carrots, cut into chunks
1 c. raw rice (not Minute Rice)
1 sm. onion, chopped
Salt
Pepper
Water

Saut e onion in small amount of vegetable oil. Add chicken and brown. Remove chicken chunks. Add to the same pan, 2 cups of water, bouillon cubes, carrots, and rice. Let come to rapid boil (add salt and pepper to taste). Allow rice to cook about 15 minutes and check to see if you need to add more water. When rice is just about ready, add cooked chicken back to pan and allow to simmer until done. This taste very plain, but children love it!
