COCKTAIL CHEESE BALLS
(MEATBALLS)
 
1 lb. ground lean chuck or round steak
1/2 c. fresh bread crumbs
1/3 c. crumbled Roquefort cheese
2 tsp. finely chopped onion
3/4 tsp. salt
1/4 tsp. ground black pepper
1 egg
3 tbsp. milk or stock butter

Combine all ingredients except butter. Shape into balls about 3/4" in diameter. Do ahead to this point. Just before serving, brown balls on all sides in hot butter. Serve hot on toothpicks.
