PICKLED BEETS 
1 c. sugar
1/2 c. water
1 c. vinegar
6 to 8 fresh beets

Cover and cook beets in water until tender when poked with a fork. Mix first 3 ingredients in a saucepan and bring to a boil. Put sliced beets in boiling juice and boil for about 8 minutes. Can be served hot, but my family liked them best served chilled.
