BROCCOLI CASSEROLE 
2 pkgs. frozen broccoli spears
2 tbsp. butter
1/4 c. chopped onions
1 can cream of mushroom soup
1/2 lb. Velveeta cheese
1 sm. can of mushrooms, slices or stems & pieces
1/2 c. slivered almonds
Salt & pepper to taste
1 can French fried onion rings

Saute chopped onions in the butter in a saucepan. Add undiluted soup. Add cheese (cheese melts faster if cut in small chunks). Add drained mushrooms and almonds. Add salt and pepper to taste. Stir constantly until cheese melts and sauce is piping hot. Cook broccoli in separate pan according to directions on package. Drain well. Place in baking dish and cover with cheese sauce. Add onion rings on top and bake at 350 degrees for 15 to 20 minutes.
