RICE PUDDING 
2 qts. milk
3/4 c. sugar
3/4 c. rice
1/2 cinnamon stick
1/4 lemon rind grated (optional)

Cook on low heat 2 hours. Stir occasionally.

1 tsp. cornstarch
2 eggs
1 tsp. vanilla

Add cornstarch to small amounts of milk. Beat with eggs, add to mixture and let stand for 10 minutes. Add vanilla to everything.
